Why when you go to add a note the date never defaults to today's date but some other arbitrary date.
Also is there any way to increase length of the note

New notes default to the current date when I test it. How exactly are you going about creating the new note? What version of FM are you using?

Sorry, no, there is a fixed maximum length to the investment notes of 255 characters.

I select notes. it defaults to new with a note field.

This dialog is a bit confusing, but the hilighted "<new>" just means you are working on a new note. The date above the list of existing dated notes is what you set for this new note. If you open up the note dialog, does that date default to the current date?
