Is there a way to perform the following actions:
1. Change all stocks internet retrieve setting to default, as opposed to each stock one at a time.
2. Set prc retrieve to run automatically after hours at a pre-set time?

Yes and yes. Go to Options > Internet Settings to set default server and retrieve time(s). And select <Default Server> for each investment in Investment Properties > Internet Retrieve tab.

Just to add to moonlighter's answer... Normally you would keep your investment properties set to "<default quote server>", and only change this if an investment needs a different quote server than the majority of your investments. The default is set under "Options / Internet Settings...". If you've set all your investments to something other than default, there is no easy way to change all of them at once.

To set a price retrieve to happen at a specific time you would need to use the command line interface, and Windows Task Scheduler. You can set FM to retrieve every X minutes, but to have it just happen once and a particular time you have to use the Task Scheduler. See the online documentation on the command line for more details.
